This No-Bake Strawberry Cheesecake is that the perfect small batch dessert for Valentine Day, Galentine’s Day, or any day the cheesecake craving hits!
Prep time: 30 minutes
- 1/2 lb. fresh strawberries
- 2 Tbsp sugar
- 4 oz. cream cheese, temperature
- 1 Tbsp butter
- 1 Tbsp juice
- 1/2 Tbsp sugar
- 1/2 tsp vanilla
- 1 cup heavy light whipping cream
- 1/2 cup granulated sugar
- 2 graham crackers
How to prepare
1Wash the strawberries well, remove the stems, then slice them. Place the sliced strawberries during a bowl, add the sugar, and stir to mix. Let the strawberries sit while you prepare the remainder of the dish, stirring them occasionally to assist prolong the juices.
2In a separate bowl, begin whipping the heavy light whipping cream on high speed with a hand mixer or stand mixer. When it becomes thick and fluffy, but isn’t yet forming peaks, add the vanilla and granulated sugar. Start on low speed until the granulated sugar is incorporated, then switch to high speed and still whip until the topping forms stiff peaks.
3In a separate bowl, combine the cheese and juice. Use a hand mixer or stand mixer to whip the cheese and juice together until soft and creamy.
4Add the topping to the bowl of topping cheese, then whip the 2 together until evenly combined.
5To make the cracker crust, place the graham crackers during a zip-top bag and use an important object to crush the crackers until they’re in fine crumbs. Melt the butter during a small bowl, then add the cracker crumbs and sugar, and stir until combined.
6To assemble the no-bake cheesecakes, divide the cracker crumbs between two jars, glasses, or other small containers. Next, add the cheesecake filling, then top with the juiced strawberries (making bound to add a few of spoonfuls of the strawberry juice with the berries). Enjoy immediately or refrigerate until able to eat!
